Leftover Fajita Breakfast Burrito

This recipe uses leftovers from Fajita night to create a tasty and quick breakfast burrito. By chopping the leftovers the chicken chunks (assuming you had chicken in your fajitas) give a nice texture to the wrap without being too chewy or tough. The fluffy eggs provide a lot of protein and overall this meal provides a on of energy for the day. If you're lucky you'll already have some shredded cheese left over as well!

Ingredients:

3 x 1 each eggs

1 x 1/4 cup milk or cream

1 x 1 cup shredded cheddar cheese

1 x 1 cup leftover fajita filling

4 x 1 each tortillas

4 x 1 tablespoon

1 x 1/2 teaspoon Hot sauce (optional)

Step 1: Whisk the eggs and milk (or cream) until smooth.


Step 2: Chop the fajita filling with a large chefs knife until it's fairly small pieces, this will help it combine with the scrambled eggs.


Step 3: Heat a non-stick skillet over medium heat and saute the leftovers until warm, then remove to a paper towel


Step 4: Add the eggs to the pan and mix lightly to create some texture. once the bottom starts to firm up add the leftover stuffing on top, evenly


Step 5: Break the eggs apart and add half the cheese, mix until cheese is melted and coating the eggs nicely


Step 6: Wrap the tortillas in paper towel and microwave for 30 seconds


Step 7: Assemble the wraps by sprinkling cheese evenly on the tortilla and adding 1/4 of the egg mixture to the center of the tortilla. Add salsa or hot sauce if desired.


Step 8: Roll half the burrito around the filling, tuck in one end, and finish rolling. The cheese you sprinkled on the tortilla will help to seal it nicely.


You could just fry up some diced peppers with a bit of salsa and chili powder (or a fajita seasoning mix) if you want these without using leftovers!
